The Lobby Lounge, the beating heart of the InterContinental Singapore, has been given a makeover in the kitchen and the result is a new menu that is both modern yet reflective of the hotel’s rich history. This rejuvenation revolves around four pillars – all of which are based on the hotel’s food and drink offerings and open up tantalising new menus.
You will discover a whole new cocktail menu developed in close collaboration with consultant award-winning mixologist Jesse Vida, injecting new life into the cocktail offerings. The cocktails, which span the daylight hours, celebrate the usage of native spices and herbs including cloves, cumin, and star anise.
Now Serving Specially Curated Cocktails
The famous Gelam Trees and spice garden of the former Malay palace in Kampong Glam serve as one of the inspirations. Starting off with the Royal Rosales (S$22) is a good idea. It’s a mixture of Kyrö Gin, Nardini Bitter, strawberry grapefruit, lemon, absinthe, pink pepper and sea salt.
Spirit-forward Flower Shop Sour (S$22) is a nod to Singapore’s pioneering businesses. It is made with Chalong Bay Spiced Rum, kaffir leaf-infused Ceylon Arak, clove orange cordial, coconut cream, lemon, chamomile honey and orange bitters.
As the page changes, the menu takes you to Haji Lane, a popular area with a constant hum of activity. Haji Paji (S$22) is a mix of Tequila Ocho Plata, Herrencia Mezcal, cumin, grapefruit, lime, absinthe and soda, all of which pay homage to the lively atmosphere of the street.
Tjendol Milk Punch (S$22) is a beverage inspired by chendol, a coconut-based iced treat served at the Albert Food Centre, one of Singapore’s greatest hawker centres. Careful milk-washing gives the clear pandan-infused drink its silky texture, which is supported by the soothing flavours of coconut, gula melaka and lemon.
Your drinking adventure culminates at the InterContinental Singapore on 80 Middle Road, where you can sip on the Legacy Eighty (S$22) made with Bobby’s Gin, blue pea-infused Blanc Vermouth, Champagne, tamarind, and orange bitters, or the smokier Flaming Tightrope (S$22), made with Nikka FTB, toasted rice, basil, chili and soda.
Stirred to Reflect True Heritage
Rhodora Amurao, assistant manager, and mixologist, reveals that the new cocktail menu at The Lobby Lounge is an ode to mixology, as well as a reflection of the illustrious history of the Bugis and Bras Basah districts. It’s not only the special spice infusions; the drinks are made to stimulate all of your senses, including hearing, with the tales of adventure and intrigue that accompany them.
Award-winning mixologist Jesse Vida says the hotel wanted to make a menu that is specific to the InterContinental Singapore and symbolises Singapore’s ethnic richness by drawing inspiration from the monuments and spices.
All-Day Gastronomical Delight
The Lobby Lounge has also introduced a brand-new, all-day dining menu designed to appeal to both local and international tastes. Well-known Chef de Cuisine Charles Nguyen is responsible for its intriguing array of international mains and upgraded local specialties, all of which come with a delicious dose of ‘wok hei’.
Nguyen hopes that customers will enjoy the new menu to its fullest because it is a mashup of flavour that presents native Singaporean cuisine with international dining. It also features dishes from its other restaurants, like the Cantonese eatery Man Fu Yuan and the Italian-themed LUCE.
The cocktails are the perfect accompaniment to the Singapore Style Chilli Crab Sliders, Satay Panggang, and Vietnamese Netted Spring Roll. Incredible wok hey and char may be found in both the Seafood Fried Hokkien Mee and Singapore Laksa. The ‘Pulled’ Lamb Panini is a 24-hour braised lamb shoulder sandwiched between two pieces of toasted Italian bread. The Hungarian-style Angus Beef Short Rib Goulash is served with mustard mashed potatoes and topped with sour cream and chilli flakes.
Afternoon Tea to Remember
The afternoon tea service at the InterContinental Singapore has always been a lavish occasion. Under the direction of Executive Pastry Chef Jason Goh, the hotel’s kitchen staff has given this age-old English custom a colourful update in honour of the warm Singaporean season.
If you’re looking for something to perk you up in the middle of the day, look no further than Citrus Afternoon Tea, which contains tantalizing layers of citrus-infused snacks. Yuzu Meringue Tartlet, Blood Orange Panna Cotta, Zesty Financier, and Asian-style Salmon Rillettes Sandwich with lemon confit are just a few of the new goodies that visitors can enjoy as a healthier alternative to the classic assortment.
Meanwhile, the most recent iteration of the trendy Vegan Afternoon Tea includes some truly original nibbles. Raspberry and pistachio tarts will join the lineup, as will vegan caviar served with stewed sweet capsicum, shiso leaf, and micro cress. All of the components used are of the highest quality, guaranteeing a delicious and fulfilling experience for the taste buds.
