I first want to thank this dish for single-handedly getting me through campus. LOL. And I know you are probably thinking, that’s a bit of an exaggeration Kane. On the real though, if it was not for Ugali Mayai A.K.A OMELETTE YA NYANYA, I might not have made it through those broke days. It still makes the occasional appearance on my plate till date and I totally see why! Its a very easy dish, cheap and most importantly, filling and delicious with a touch of Nostalgia!

Ugali Mayai is basically a spicy scrambled egg stew, that can either be served with Ugali, a common Kenyan maize flour starch, or with bread for breakfast. If you go to a Kenyan home and ask for an Omelette, expect too be served this, and I promise, you will love every bit of it!

Kenyan Egg Stew (Ugali Mayai)
A simple affordable Kenyan Staple
Cost: 100
Ingredients
- 4-5 eggs
- 1 Onion chopped
- 2 tomatoes cubed
- 1 small bell pepper/ hoho optional
- 3 cloves garlic
- 1/4 teaspoon ginger ground
- 1 tablespoon curry powder
- 1/4 teaspoon salt
- Chillies optional
- 1 bunch Dhania/coriander
- 2 tablespoons Oil
Instructions

On a heated pan, fry the onions in the vegetable oil until the onions are soft and slightly brown.

Add in the ground ginger and garlic and fry until fragrant.

Add in the curry powder and cook for a further minute.

Add the tomatoes and bell pepper, if using, and cover on low heat.

Uncover once the tomatoes are cooked and soft.

Add about 1/4 cup of water and allow the tomatoes to cook further into a sauce.

Next up, add in the eggs, one by one and season with some salt.

Stir the eggs slowly and consistently as the eggs continue to solidify.

Keep mixing and scrambling until all the eggs are dry and cooked through.

Finish off with the chilies, if using, and the dhania.

Serve hot with Ugali or freshly toasted bread!

I served mine with some fresh garlic sautéed spinach to make this a complete and balanced meal. This recipe can easily be doubled or tripled to serve more people.
