This creamy Octopus Linguine pasta is rich, creamy and the kind of dish that hugs your insides. Ever since I first tasted Octopus, I was immediately hooked. It fortunately, became my gateway into my current deep love for seafood. For me, the texture was it for me. I actually reminded me of Matumbo (Tripe), and if you’re an OG reader, you know that on these STREETS, WE LOVE AND STAN MATUMBO!

I know, every meal time should be a special time, but I like to think it’s nice to indulge on not-so everyday meals once in a while. The combination of Pasta and seafood is always so special. One of my other all time favorites is Garlic butter shrimp with pasta that is so rich and indulgent.

Ingredients
Linguine
Linguine is flat and wide as compared to spaghetti that are long, round strands and they are quite popular locally . It can generally be used interchangeably with spaghetti, accompanied by sauces like this creamy coconut sauce. I chose these variety of pasta because it is thicker and starchier, making it a perfect base for this sauce.

Creamy Octopus Linguine Pasta

Ingredients
- 1/4 KG Cleaned Octopus
- 300 Grams Linguine pasta Can be replaced by your favorite pasta
- 1 Onion
- 5 cloves Garlic
- 1/2 tablespoon Ground Ginger
- 1/2 cup coconut cream Alternatively use heavy cream/cooking cream
- 1 handful Cherry Tomatoes
- 1/2 teaspoon Turmeric
- 1/2 Tablespoon Paprika
- 1/2 tablespoon Salt
- Blackpepper
- 2 sprigs/tbsp. Fresh Rosemary/dry
- 2 sprigs/tbsp. Fresh Thyme/dry
- 2 Chillies
- 4 cups Water
- 1/2 cup Dhania/parsley
Instructions

In 2 cups of boiling water,-Add the herbs(Rosemary, Thyme)-2 cloves of garlic-Large pinch of salt-Chilies

Dip in the octopus and let it boil for 8-10 minutes depending on the size. Poke with a fork to check the tenderness.

Save the fragrant broth to cook with later or to drink!

Remove and chop the octopus into bite sized pieces.

Cook the pasta in boiling salted water until al dente (Still firm when biting)

Strain the water and save a bit of pasta cooking water to use later.

In 2 tablespoons of cooking oil, Sauté 1 chopped onion until soft and translucent.

Add in 3 cloves of ground garlic and ground ginger, cook for 2 minutes until fragrant.

Add the turmeric and paprika and cook the spices briefly, Before adding the halved cherry tomatoes for about a minute.

Pour in the cream and about 1 cup of the saved pasta water.

Allow this to simmer for about 5 minutes and begin to thicken up.

Add the chopped octopus, alongside the cooked pasta.

Combine and ensure that the pasta is covered evenly in the sauce.

Taste to adjust the seasoning.

Finish off with the black pepper and chopped coriander/dhania.

Serve hot and enjoy!!
