HighHouse: Where Rhythm, Flavour and Skyline Views Converge 282 Metres Above Ground

Perched high above in the heart of Singapore’s CBD, HighHouse occupies the 61st and 62nd floors of One Raffles Place—formerly home to 1-Altitude—and reinvents the rooftop experience as more than just a scenic escape. At 282 metres above ground, this new lifestyle and dining destination blends art, music, mixology, and modern Pacific Rim cuisine into an immersive, intentional experience.

The journey begins in the lift, where I found myself marvelling as the ground slipped further and further away. Upon arrival, the atmosphere strikes a confident balance: elegant yet unpretentious, polished but never stiff. Low lighting and plush textures create a sense of ease throughout the space. From tucked-away tables to the polished bar counter, every seat offers a view, whether of the stunning skyline or the vibrant energy of the venue itself. Service is warm and intuitive, with a knowledgeable team ready to offer thoughtful pairing suggestions or guide guests through more unconventional menu items.

HighHouse’s culinary direction is rooted in Modern Pan-Asian cuisine with a Pacific Coast influence, drawing inspiration from coastal cultures spanning South America, Oceania, and Southeast Asia. The Pacific Coast Ceviche (S$24) was a strong start – an elegant mix of Hokkaido scallop, Ahi tuna and yabbies cured in a coconut-lime dressing. Served with house-made chips for textural contrast, the dish was refreshing and delicately balanced – ideal for a first course at this height.

In contrast, the cleverly named “That Expensive Indomie They Told You About” (S$38) played with boldness and nostalgia. This tongue-in-cheek reimagination of instant noodles arrived topped with miso foie gras, braised chicken, a fried egg, and house sambal on the side. Rich, deeply savoury and unapologetically indulgent, it’s a dish that invites both curiosity and comfort, though it veered slightly heavy on seasoning.

Dessert was an off-menu surprise: HighHouse’s rendition of Apple Pie. Served more like a mille-feuille than a tart, it featured layers of delicate pastry, mascarpone, and a tart apple purée with crisp apple chunks throughout. Light, textural, and well-balanced, it was a satisfying end to the meal without weighing things down.

No visit is complete without exploring the bar’s craft cocktails, where creativity truly runs deep. This June, on behalf of PATRÓN Tequila, guests are also invited to embark on a self-guided tasting journey as part of Cocktail Masters by Academia Patrón. Six of Singapore’s top bars, including HighHouse, are showcasing their Paloma cocktail entries—each one a bold, boundary-pushing twist on the tequila and grapefruit highball the world is falling in love with. This is a rare opportunity to preview the most inventive serves ahead of the competition finals next month. The winner will earn a trip to Hacienda Patrón in Mexico, where every bottle of PATRÓN is handcrafted.

Fii-Rmaid. Photo © Kyler Teo

As part of this initiative, Fii-Rmaid (S$22) takes centre stage at HighHouse—a limited-time cocktail created by Assistant Bar Manager Nizam for the Patrón Cocktail Masters competition. Built on a base of Patrón Reposado, each litre of mango saccharum is painstakingly made using three whole mangoes, yielding a deep, natural sweetness. The real twist lies in the tart “vine” component—a halal fermented grape and grapefruit blend infused with seaweed for a subtle saline kick, inspired by the mythical mermaid. (No alcohol is involved in the fermentation—just clever flavour work.) The result is a refreshing, citrus-driven drink with tropical depth and a savoury edge, balanced out by bubbly house-made lime soda and the smooth warmth of Patrón Reposado.

Montana Sour. Photo © Kyler Teo

Another highlight from the cocktail menu was the Montana Sour (S$20) – a personal favourite of the night. Built on a base of Machhu Pisco, this cocktail reimagines the traditional Pisco Sour with clarified citrus, lemon and lime citrate, and the delicate floral notes of peony tea. Finished with a velvety key lime foam, the drink is zesty, creamy, and strikingly balanced—a playful yet elegant creation that calls to mind Peru, where the Pisco tradition runs deep.

Sticky Mango Highball. Photo © Kyler Teo

We also sampled the crowd-favourite Sticky Mango Highball (S$20) – an elegant, clear cocktail that truly captures the essence of the iconic Thai dessert, mango sticky rice. Crafted with Chalong Bay Thai Agricole rum and a luscious, clarified mango sticky rice cordial, it’s brightened with citrus notes for balance. The result is a nostalgic yet refined sip that’s both sweet and refreshing, with just the right amount of tropical warmth.

Roselle. Photo © Kyler Teo

My dining companion found her match in the Roselle (S$22) – a vibrant reinterpretation of the classic Singapore Sling. Crafted with No.3 Gin, homemade roselle and cherry cordial, and a tropical touch of coconut and pineapple liqueur, this cocktail bursts with bright, fruity notes. The infusion of Malaysian roselle adds a distinctive floral tartness, lending the drink a fresh, Southeast Asian flair. Balanced with a hint of citrus, it’s a lively and refreshing sip that complements the evening perfectly.

As the evening progressed, the atmosphere shifted seamlessly—lighting dimmed, music pulsed louder, and conversation rose to meet it. The panoramic views are stunning any time of day, but they become especially captivating during events like the National Day Parade. In the lead-up to National Day, the venue offers one of the city’s most exclusive vantage points for fireworks and the aerial flypast—a front-row seat to the sky’s spectacle.

NOVA. Photo © Kyler Teo

For those seeking a breezier, more casual rooftop experience, NOVA awaits just one level up on the 63rd floor. Helmed by the same team, NOVA swaps opulence for open air and delivers the laid-back energy ideal for sundowners and late-night drinks under the stars.

With culinary expertise, atmospheric versatility, and an unmatched view of the skyline, HighHouse makes a strong case as one of the city’s most compelling rooftop destinations. Whether you’re there for cocktails, conversation, or to catch the city glowing beneath you, it offers a complete experience—one that lingers long after the elevator ride down.
