Mai tai cocktail

Bright citrus, rum and almond make this cocktail a perfect party starter. If you don’t have the time, orgeat can be bought at liquor stores however homemade is best!
MAI TAI COCKTAIL
Prep: 30 minutes | Serves: 1
Ingredients
Orgeat (makes 250ml)
125ml unsweetened almond milk
225g caster sugar
1½ tsp almond extract
¼ tsp orange blossom water
4 tsp jamaican rum
Mai tai
60ml jamaican rum
15ml Cointreau
20ml fresh lime juice
20ml orgeat
Ice, crushed
Garnish
Fresh mint
Lime or lemon slices, dehydrated or fresh
Method
Orgeat: Heat the almond milk in a small saucepan over medium heat, add the caster sugar and stir continuously until the sugar has dissolved. Bring to a simmer and remove from the heat.
Add the almond extract, orange blossom water and rum and stir to combine. Set aside to cool then pour into a glass jar and refrigerate.
Mai tai: Place the rum, Cointreau, lime juice and orgeat in a cocktail shaker. Shake well to combine. Strain into a glass filled with crushed ice.
Garnish: Top with fresh mint and lime or lemon slices.
